  • 2 teaspoon paprika
  • salt to taste
  • 10 medium red peppers
  • 1 ib potatoes
  • 2 onions, chopped

  • 4 tablespoons olive oil

Method of preparation

Step 1: Firstly, cut the tops of your peppers and remove the seeds. Then peel your potatoes and chop them as finely as you can.

Step 2: Heat your olive oil in a frying pan or skillet and cook the onion until they turn translucent. Add in your potatoes and cook for about 5 -6 minutes until tender. If it starts browning a bit, it’s fine, just stir well to avoid burning.

Step 3: Add in your paprika, black pepper, salt, garlic powder and any other spices you want to use. Give it a good mix and remove from heat.

Step 4: Stuff in your peppers with the cooked potatoes, pressing well to make sure they is no hollow parts.

  • 4 tablespoon hummus
  • 1/2 teaspoon turmeric

Method of Preparation

Step 1: In a pan, heat up the oil over medium heat. Then chop your mushroom roughly and throw them into the pan, stirring a little.

Step 2: Peel and core your apple, slice into four places, slice two bits into thin little pieces and add them to the mushrooms.

Step 3: Stir this mixture until the mushroom softened, smash in your garlic and add to the mixture. Then stir for a minute.

  • 1 avocado
  • 4 wraps

  • 1 teaspoon tabasco, optional
  • 1 tablespoon soy yogurt, optional

 

Method of preparation

Step 1:  Chop the tofu into tiny squares. Dice the onion and also the bell pepper.

Step 2: On a low-medium heat, heat up the olive oil and fry the tofu, pepper and onion on a low-medium heat for about 15 minutes. Then scoop out the avocado flesh.

Step 3:  Mix in some salt and pepper into the tinned tomatoes and add a little spicy sauce.

Step 4:  When the tofu-mix is ready, heat up some tortilla wraps on each side in a hot pan for about 20 seconds.

Step 5: If you are using tomato paste, spread a tablespoon over each wrap. Make a line of tinned tomato and another line avocado.

Step 6: Fold the bottom up slightly, then each side and wrap tightly. Nothing should escape out of the bottom.

  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 4 sweet potatoes
  • 2 garlic cloves, crushed

Step 1: Firstly, heat up your oven at 200C. Then prick the sweet potatoes all over with a fork, then put on a baking tray and roast in the oven for about 45 minutes or till it gets tender when pierced with a knife.

Step 2: Melt your coconut oil in a large saucepan over medium heat, then add in your cumin seeds and fry for about 1 minutes until fragrant, then add in your onion and fry for 7-10 minutes until tender.

Step 3: Add your garlic, green chili, and ginger into the pan and cook for about 3 minutes, then add in your spices and tikka masala paste and continue cooking for more 2 minutes until tender.

Step 4: Tip in your tomatoes, bring to a simmer and tip in your chickpeas and cook for further for about 20 minutes until it get thicken. Then season.

Step 5: Put the roasted sweet potatoes on four plates and cut open lengthways. Spoon over the chickpea curry and squeeze over the lemon wedges. Season then sprinkle with coriander before serving. Enjoy.
