Method Of Preparation Of Gluten-Free Breakfast

 

Step 1: Firstly, preheat the oven to 425F and line up a baking sheet with parchment paper.

Step 2: Combine your flour, baking powder, sugar, pumpkin spice, salt in a sifter and sift into a large bowl, mix it up to combine.

Step 3: Grate your butter in a cheese grater and add it into the dry mixture, then combine the shredded butter and dry ingredients with your hands until there are no lumps and has a coarse sand texture.

Step 4: Whisk your pumpkin, half and half, egg in a large bowl until they get smooth. Pour in your wet ingredients into the dry with a wooden spoon until a thick dough forms out of it.

Step 5: Now, transfer the dough onto a lightly floured surface with additional flour and make a large circle around.

Step 2: In a large bowl, combine your butter and granulated sugar. Beat on medium-low speed until it gets thick. Add in your eggs as the beater is still running, beat until well combined.

Step 3: Add in all your dry ingredients and mix on low speed. Mix until it’s thick, stop the mixer and add in your milk and vanilla extract and then mix until a thick batter is formed.

Step 4: Slowly fold in your blueberries with a rubber spatula, the batter will get very thick if you are using frozen or cold blueberries.

Step 5: Spoon in your batter into prepared muffin pans and fill each cavity about 2/3 full. Top each of them with about a teaspoon of granulated sugar.

Step 6: Bake this until a cake tester inserted into the center of one of the muffins comes out clean, about 25 minutes.

Step 7: Allow your muffins to cool in the pan for about 5 minutes and then transfer to a wire rack to cool completely before serving.
