  • 4 chicken breast
  • olive oil
  • 1 lemon, 1/2 sliced
  • 3-4 sprigs thyme


Method of Preparation

Step 1:  Firstly, heat up your oven to 200C. Add a couple tablespoon olive oil into a small roasting tin. Add your lemon slice and sit the chicken on top of it. Apply little olive oil on each of the top of the chicken breast and season well.

Step 2:  Squeeze out the juice from the remaining lemon half on the chicken and add the thyme sprigs between the chicken breast.

  • 4 skinless and boneless chicken thighs, halved
  • 250g new potatoes, halved
  • handful of parsley, roughly chopped
  • 2 tablespoon plain flour
  • 2 tablespoon olive oil
  • 65g stuffed green olives
  • 1/2 lemon, zested and juiced
  • 2 teaspoon dried oregano
  • 2 tablespoon capers, drained and dried
  • 1/2 bag peppery salad, for serving


Method of Preparation

Step 1:  Firstly, put a pan of salted water on heat and bring it to a boil, add in your potatoes and boil for about 8 to 10 minutes until cooked through, then drain out the water.

Step 2:  Mix your oregano and flour, then toss the chicken in it. Place oil over high heat and fry the capers until they get crispy for about 2 minutes. Remove and set aside.

Step 3:  Turn the heat to low and then add in your chicken then fry until they gets golden for about 10 minutes. Add in the drained potatoes into the pan with the olives.

  • 2 skinless, boneless chicken thighs, about 225g in total, all fat removed and chopped

  • 1 red pepper, deseeded and chopped
  • 175g tender stem broccoli, stems sliced on the angle, florets left whole
