Method of Preparation

Step 1: (Optional) If using drippings: Pour out your drippings from the pan into a bowl when you are done taking out your chicken. Allow the dripping to rest for a minute. Use a spoon to scoop out most of the fat from the dripping after it has rested.

Step 2: To make your chicken gravy, use a large sauce pan and add 1/2 cup of drippings to the pan. Add in 1/4 cup of flour to the pan and whisk together until it gets smooth. If you want a thick gravy and yours is a little greasy, add in more flour to get to your desire consistency.

Step 3: Whisk in your cold stock slowly, then reduce your heat t low in other not to get burnt when you have found your desired consistency. You are creating a roux when you are doing this.

Step 4: Once you get a nice lightly golden color, add 2 cups of chicken broth and 1/4 additional cup of drippings if not using drippings add 1 teaspoon chicken bouillon paste.

Step 5: Allow the gravy to cook, whisking constantly for about 5 to 8 minutes, or until it gets thickened. If it is too thick add in more broth or drippings liquid. If too thin after cooking for 10 minutes, add in cornstarch slurry.

Step 6: Once you gets to your desire consistency, season with salt and pepper and enjoy your gravy.
